Soak ginger and dates in hot water while you grate lemon zest, squeeze lemons, and cut the rind and all the pith from the orange you will be using.
When ginger is softened, pour with the dates and water into your blender’s cup and add the remaining ingredients. Blend until all is smooth as cream. This may take a minute or two depending on the quality of your blender.
Store in a covered container and chill, or if not using soon, keep in the freezer.
