This sauce is thickened and sweetened with dried pineapple pieces which are a most delicious compliment to the strawberries. I like to freeze berries in the summer because we can buy ones that have much more flavor than those from the store. However, it is still a great treat either way. It is delicious over pancakes, waffles, ice cream & berries, banana splits and one of our favorites is cooked cornmeal with sliced bananas, strawberry sauce and milk–now that’s a breakfast! Canned pineapple does not give the same result in flavor or texture. If you can only find dried pineapple in rings, cut them into small pieces before using them.
Instructions
- Soak thawed berries and dried pineapple overnight in fridge, or soften pineapple in boiling water for a few minutes and drain.
- Combine in blender and blend until pineapple is smooth.
- Serve at room temperature over waffles, pancakes, or ice cream and berries. Use within 2 days, or freeze for a later date.
