This Tex-Mex soup is hearty and flavorful and can easily be made with ingredients from your cupboard or freezer. It is a very quick and convenient meal to serve for unexpected company or just your family when you haven’t had time for planning and cooking.
Ingredients
- 1 large onion, chopped
- 1 teas cooking oil

- 2 15-oz. cans black beans with liquid
- 2 cups frozen corn --may use canned, reserve liquid as part of hot water
- 1 14-oz. can Mexican-style chopped tomatoes
- 1 1/4 cups hot water
- 1/3-1/2 cup beef-flavored TVP or Mexican flavored TVP
- 3 bay leaves
- 1 tbsp lime juice
- 1-2* teas. McKay's Vegan Chicken-Style Seas --to make your own, see Misc.
- 2 teas chili powder
- 1 teas minced bottled garlic --or one clove minced garlic sauteed with onion
- 1 teas cumin

Instructions
- In a 2-quart kettle, saute the onion in the oil, using a little water if needed.
- Add all the remaining ingredients to the kettle with the sauteed onion.
- Simmer 10-15 minutes to blend the flavors.
- Remove bay leaves. Garnish with green onion and cilantro
Recipe Notes
*The amount of chicken-like seasoning depends on the salt content of the TVP that you use or the salt content of the canned beans & tomatoes which varies from brand to brand so you might want to taste first and add the seasoning after.
For a quick meal, add your favorite salad and some baked taco chips or cornbread.
