These almond-maple cookies started out to be for those folk who are gluten-free; however, they are so delicious everyone else loves them, too! They don’t require much work. As you can see, they only have three ingredients! When they are completely cooled, if you are not using them right away, put them in a freezer container and freeze them--that way they will be nice and fresh when you do serve them, retaining their original crispness. Be sure and remove them from the container before you defrost them.
