By now the summer harvests are at full swing, especially with the squash. We were planning on a lot of traveling this summer, so we didn’t plant but two things; however, the seeds from last year’s garden were generous and much to our surprise the beds are full and running over with produce. One of our favorite summer fare is the lovely yellow crookneck squash. They are good in so many dishes or just sauteed with onions. This year our daughter shared a simple and delicious way to serve them. Just three ingredients and a good hot oven! We chose to use garlic salt, but any seasoning of your choice would be an easy substitute.
