Roasted Crookneck Squash
Coarse garlic salt
–or seasonings of your preference
Preheat oven to 420 degrees.
Use nice-sized squash, not tough or overgrown. Cut it in half lengthwise, through the neck all the way to the flower end.
Rub or brush all sides with olive oil.
Lay on parchment paper or a nonstick cookie sheet and sprinkle generously with the garlic salt.
Bake for 10 minutes, turn squash over and bake an additional 10 minutes. Serve hot.
